In September 2002, we were very fortunate with our Brisket

This is a "Brisket". An ugly chunk o' beef best ground into hamburger.
I want to tell you all that it takes real skill to turn THAT into THIS:

But I can't, 'cause it was really just some incredible luck!
Since then, our brisket placed in the top ten three contests in a row, and we thought we were on to something.
It’s now May, 2003 and time for that hometown MIM contest. We’ve been steadily (read, “slowly”) improving our rib score, but the best we’ve gotten is eighth place. It’s been discouraging, ‘cause there’s only a few serious cooks at this contest, and a whole bunch of Friday night partiers who burn ribs Saturday morning. We had to make a change.
